Cumin lamb biang noodles from Dumplings and Noodles: Bao, Gyoza, Biang Biang, Ramen--and Everything in Between (page 109) by Pippa Middlehurst

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

  • Eat Your Books

Can substitute the book's "Sichuan chilli oil" for chilli oil.

Prep and cooking took me a lot longer than the 10 + 20 advertised, and I didn't even make my own noodles. Quantities also seem a bit off - I googled but didn't find errata so referred to a Woks Of Life recipe for proportions. I reduced the tbsp measures of spices to tsp and got a more sensible looking amount and a pleasant but not overpowering taste. Sort of intrigued to know what it'd be like in tbsp - like wood paste or a spicy wonder that I'm missing out on? Will need to restock and buy a spice grinder to find out. Would be interested to know how others found it.
