    Really nice, although I went off-piste for this recipe. I filled the omelette, made to his specifications, with the left-over mushrooms, chilli oil and tomato-onions-chilli puree from last night's recipe (Ottolenghi's mushroom steaks), and some melty marinated goat feta. Omelette was sprinkled with my dried sage. It was awesome! With this filling, 2 eggs would be enough, or, cut in two it would be enough for 2 people with some sourdough toast.
