  • Omelette with goat's curd and sage

      Really nice, although I went off-piste for this recipe. I filled the omelette, made to his specifications, with the left-over mushrooms, chilli oil and tomato-onions-chilli puree from last night's recipe (Ottolenghi's mushroom steaks), and some melty marinated goat feta. Omelette was sprinkled with my dried sage. It was awesome! With this filling, 2 eggs would be enough, or, cut in two it would be enough for 2 people with some sourdough toast.

  • Choc banana bread

      This is my go-to banana bread recipe. This time, I doubled up the recipe but split it between 3 tins and baked it for a little less time (50 mins). I didn't quite have enough bananas or choc chips for the doubled quantities and I subbed out 50g of flour for 50 of cocoa, too.... which is all to say; it's a great base recipe and also very forgiving of what you have on hand.

      Bill's Potato Cakes are just gorgeous. The salmon was replaced with wilted mixed greens to make a vegetarian dish. Added a side salad of fresh tomatoes and herbs. The mustard dressing really is something, and the key to making this a delicious brunch.

  • French toast with fresh berry sauce

      We make this using a sweet chickpea, cream and eno batter for the toast, and berries. Baked strawberries go particularly well with this dish. Or spoonfuls of home made strawberry jam. Perfect for Summer Sunday breakfasts/brunches.

  • Crab and asparagus risotto

      Easy recipe that works well if you have good-quality crab meat. I used the meat from 1 1/2 Dungeness crabs, which are in season here in the San Francisco bay area, and the risotto was luxuriously full of crab. It is asparagus season too, so the key ingredients were first-rate.

      Really, really tasty. I prefer more corn to mix, so omitted the second quantity of flour. It is also a good idea to beat the egg white until stiff and gently fold this in at the end for extra lightness.

      These are great as finger food with a drink. I use rice flour to make them gluten free and more crispy. Have made them many times

      nice, i think by baking it ( as opposed to quick stir fry) you still get the taste of the garlic but with a softer edge. Simple and easy to do

      This dish is not very hard to make at all, but makes an impressive plate, what with the add-ins and sauce alongside the chicken, which itself is nicely glazed because of the honey in the marinade -- which, by the way, is itself delicious.

      I made this again last night after not having made it for 10 years. It's as delicious as I remember, very easy for a midweek meal.

      p148. The zucchini didn't cook enough for my liking. I added extra water and covered the dish again to steam it for longer. Alternatively, could pan fry at start of recipe. I would make this again though.

      Very easy to make and result was great. Definitely making it again. I used Japanese Niigata medium grain rice for this and it was good.

      An easy dish for when you don't have a lot of prep time, or the zukes need to be used. A great baked rice dish. (Not risotto, in my books. I am old fashioned on this account. Risotto needs stirring to develop its full beautiful creaminess.) The parmesan crust on this is beautiful. Excellent with Nigel Slater's Carrot Salad.

      I've made this again after 5 years, and am reminded of how easy and how flavoursome this dish is. It is also filling but light. Unlike many other baked risottos it is not heavy on butter, cream or cheese which are often used to replace the creaminess of stove-top stirring versions - Bill's just has a sprinkling of parmesan over the top. So simple to make. I must make it more often.

      Simple and easy, yet restaurant quality flavours. I've made it regularly since the first time several years ago, when it blew me away. I usually have it with salmon fillets these days, but it works well with any grilled fish.
