    Can substitute dill pickles or kosher pickles for sweet pickles, and Thousand Island dressing for Russian dressing.

    Our favourite potato salad! I make half the recipe (2 lbs. of potatoes and 3 eggs and I halved the remaining ingredients). I followed the recipe, except left out the Thousand Island/Russian dressing (didn’t have) and substituted finely chopped red onion for the scallions. I also added a rib of celery (optional), bacon bits (also optional) and left out the optional cheese. Absolutely delicious. The only potato salad I make now.
