    First off, this recipe scores top points for simplicity of preparation. Essentially you dice various vegetables into good sized pieces and then mix with the tomato and seasonings and toss it into a very hot oven. The result is very flavourful and quite healthy with a good balance of tang and sweetness. The heat also results in a slight roasting of the vegetables which adds to the flavour. The preserved lemon is an excellent garnish and finishes the dish off perfectly. It doesn't score 5 because it isn't spectacular but it is very tasty, easy and healthful.
