    Can substitute dried borlotti beans for dried cannellini beans, chicken stock for vegetable stock, and nutritional yeast flakes for Parmesan cheese. Dried beans must soak in water overnight.

    Used a can of cooked cannellini beans and about 3/4 cup of broken vermicelli. This was very fresh and comforting. A great bowl of healthy vegetables, though nothing that will completely blow your mind. Just a good minestrone!
