Espresso banana muffins from Super Natural Cooking: Five Delicious Ways to Incorporate Whole & Natural Ingredients Into Your Cooking by Heidi Swanson

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

The smell coming from the oven while these were baking was heavenly. Next time, I'll try this with mini chocolate chips. The recipe makes more than 12 muffins unless you are making really big muffins. I ended up with about 18.

Really good flavor! These came out a bit gummy, but I'm enjoying them split open and toasted with butter.

I didn't like how the texture came out, but the flavor combination is great.

I love this recipe. This time around, I used half white flour and half whole wheat, and substituted hazelnuts for the walnuts.
