    My chicken breasts were extra large so I cut them in half both vertically and horizontally (after removing the tenders) to make 8 cutlets, which I cooked in 3 batches (and did need to add a little oil for the 3rd batch). There was some extra egg left (could maybe get by with one), but appropriate amounts of flour and panko mixture. Delicious, moist chicken with crispy coating that adhered well. Served with salad.
