Can substitute Korean buckwheat noodles, vermicelli noodles, spaghettini pasta, or fresh Chinese noodles for buckwheat noodles; and the book's "Egg strands" for hard-boiled eggs. Can use the book's "Delicious stock made with soy-bean sprouts" and "White radish water kimchee (Dong chimi)". See recipe for optional seasonings.
