    Quite tasty and perfect for a damp and chilly weather meal. Makes a huge amount of soup. My 8 quart pot was filled to the brim during the cook. I didn't pre-soak the beans. This did not appear to affect the timing to any significant extent. I did find that I needed to add a fair amount of salt, no doubt because the other ingredients that might have been salty were actually fairly mild. Note that 2 cups of dried beans is equivalent to one pound.

    The picture that appears along with this recipe does not depict the finish product. For one thing, there are no greens included in the ingredients, nor are there any large solid chunks in the finished soup. My guess is the picture actually belongs with the next recipe in the book - Salmon, Rice, and Leek soup.
