      The picture that appears along with this recipe does not depict the finish product. For one thing, there are no greens included in the ingredients, nor are there any large solid chunks in the finished soup. My guess is the picture actually belongs with the next recipe in the book - Salmon, Rice, and Leek soup.

      Quite tasty and perfect for a damp and chilly weather meal. Makes a huge amount of soup. My 8 quart pot was filled to the brim during the cook. I didn't pre-soak the beans. This did not appear to affect the timing to any significant extent. I did find that I needed to add a fair amount of salt, no doubt because the other ingredients that might have been salty were actually fairly mild. Note that 2 cups of dried beans is equivalent to one pound.

      Marvelous! I cooked dry Rancho Gordo Marcella beans in the Instant Pot, then substituted some of the pot liquor for half of the water. It was sublime. I’ll be making it for company.

  • Salmon, rice and leek soup (Minestra di salmone, riso e porri)

      This is a really lovely, handy recipe that can stretch a couple fillets of defrosted salmon to feed a family, BUT, I would never make it as written. One teaspoon salt to 3 quarts water? No. Just water instead of a little vegetable, light chicken, or seafood bouillon broth? Why??? And such a simple soup really needs an acid to brighten it. So, my revisions included 2 teaspoons salt, a spoon of chicken “better than bouillon”, and juice of half a lemon added at the end. I think without adding the seasoning and acid of your choice, you might find the soup very bland.

      Okay, but pretty bland. I was surprised at the amount of water in the recipe in proportion to the vegetables. I think it would be better with less water, and better still with stock instead of (or in addition to) the water.

      Delightful! Really easy to prepare, wonderful flavor. We just loved this and will definitely be making it again.
