Pecan maple pie with kumquats and bourbon from Tartine: Sweet and Savory Pastries, Tarts, Pies, Cakes, Croissants, Cookies and Confections (page 66) by Elisabeth Prueitt and Chad Robertson

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

I’m a pie and tart novice, and this was not the quickest dessert, but the end result is worth it. (The crust recipe makes two shells so you could easily make a second pie. Someone would be very happy and lucky to receive it!) Complex flavor and you can really taste the bourbon, maple and kumquats. Insanely delicious and beyond decadent with the recommended unsweetened whipped cream.

Love this version of Pecan Pie. The kumquats cut some of the sweetness away. Lovely.

The resulting pie is a really wonderful riff on the classic. Not overly sweet or simple and perfect served warm with buttermilk ice cream.
