    Can substitute shallots for small onions, and vegetable stock for beef stock.

    This was really tasty. Lots of flavour - but then there should be! I used port instead of red wine and used small chantennay carrots and shallots. It did dry out, so I added more water before adding some dumplings. This unfortunately then dried out the gravy a bit too much. Next time, I'll add double the stock at the beginning. Much tastier than my made up stews!
