    Can substitute plain flour for spelt flour.

    Half quantity with plain flour, vanilla yogurt and flax egg yielded 6 muffins. Didn't make the crumble topping and wouldn't in future. Kept well for a couple of days, still light and moist. Nice and easy recipe, Pear and ginger would be another good combination.

    Made after reading Beth 891’s note and knowing I still have lots of golden and Fuji apples from last fall’s harvest in the refrigerator I like to use up before this year’s harvest. I did add pecans, vanilla and reduced the brown sugar to 100g which was a perfect sweetness for us. Perfect snacking muffins for breakfast or late afternoon. It is a little crumbly from apple pieces and next time, I would add extra 3-5 min baking time. Photo added.
