    Nice, flavorful summer salad. I used the Zesty ranch dressing recipe in the book and it turned out well. The chicken marinade lists a range of up to 8 hours, but I would do only a couple hours next time. I marinated for around 7 hours and the chicken had an odd chalky texture (probably from the lime juice). I would make this again.
