    Can substitute pear brandy or coffee for brandy.

    This is a pear upside down style gingerbread cake, with the pears on the bottom of the skillet and the batter poured over the top. With two tablespoons of ginger in the batter, I would increase the amount of pears in the recipe to at least 4. That said, this is a very tasty cake.
