      I used self-rising white stone ground cornflour as Byrn suggests in her note. I also fried some pods cut horizontally and some cut vertically. Horizontal is better.

      So good just out of the oven. I needed almost the full amount of the suggested water to have a loose enough batter. Also, I needed to rotate the skillet halfway through so that one side was not getting a lot crisper than the other.

      Made this in a 10.25 deep skillet from Lodge with lid. Turned out great. It doesn't taste like sourdough but has a texture like sourdough. Will make again.

      This has now become my favorite quiche recipe. I especially like the baking technique (start high, then turn down heat). Good thing I didn't add salt (the recipe didn't call for it), because the prosciutto is salty enough. I did use a refrigerated pie crust and it was fine. Excellent quiche.

      A very creamy quiche - may have needed another 5 minutes, but it was very tasty. No extra salt needed because of the pork but I think a pinch of black pepper would not go amiss.

      This is a pear upside down style gingerbread cake, with the pears on the bottom of the skillet and the batter poured over the top. With two tablespoons of ginger in the batter, I would increase the amount of pears in the recipe to at least 4. That said, this is a very tasty cake.

      It made a tender crust to go with the Quiche Lorrane from this book. I had better luck with the recipe from Cook's Illustrated, with rolling out the pastry, but this tasted perfect with the quiche.

      Hoo-boy! So this recipe uses Creole seasoning, and so I followed an internet recipe to make my own, and then followed this recipe and rolled the chicken pieces in the spice mixture. This definitely was more of a 'blackened' chicken recipe by doing that. But cooking all of the veggies, rice and chicken in the same skillet spread that flavor throughout the dish - very tasty! The rice needed an extra 10 minutes to cook, so you may want to keep an eye out for that.
