Pork must marinate at least 2 hours. Can substitute apple cider vinegar for pineapple vinegar; muscovado sugar or dark brown sugar for panela sugar; pork loin, pork leg, or pork backbone for pork shoulder; and bay leaves for wintergreen leaves.
