Herby za'atar flatbreads (Mana'eesh) from Arabiyya: Recipes from the Life of an Arab in Diaspora (page 77) by Reem Assil

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Can substitute this book's "Basic sourdough ('Ajeenah mukhammara)" for a sourdough version of this bread; and this book's "Wild thyme, sumac, and sesame mix (Za'atar) for commercial za'atar. See recipe for variations with topping recommendations.

These were fun to make, but I felt that the bread was a little bland. I think the sourdough option might produce a better outcome. These do not keep well and by day #2 they weren't holding up as well as real pizza would. I made a few plain ones as well and I prefer my regular pita bread recipe to these.
