Cranberry vanilla breakfast buckle from Snackable Bakes: 100 Easy-Peasy Recipes for Exceptionally Scrumptious Sweets and Treats (page 66) by Jessie Sheehan

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Can substitute milk for heavy cream.

Delicious, if quite sweet - although it seemed like a lot of cranberries, I wouldn't have minded more. My buckle took an extra 7 minutes to bake (used frozen berries) - perhaps not necessary? The topping got very crunchy but the cake was still moist the next day. Next time I would reduce the sugar and perhaps try adding cardamom or orange zest like others did.

I utilized the cardamom tip and also added some oranges to the top for a Scandinavian morning bun flair. I have made and enjoyed buckles in the past and this is another good one.

This was sweet and tender with pops of tart cranberries and a crunchy topping. Really delicious. I subbed gluten free flour and the texture did not suffer.

This was delicious. I added 1/2 tsp cardamom to the crumble and 3/4 tsp cardamom to the cake part. Next time I'll increase it to 1 tsp in the cake.
