Contest-winning (jumbo) peanut butter cookies from Snackable Bakes: 100 Easy-Peasy Recipes for Exceptionally Scrumptious Sweets and Treats (page 123) by Jessie Sheehan

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

This is my go-to peanut butter cookie. I had to swap out coconut oil and more butter for the shortening (forgot to add this to grocery list) and still turned out wonderful. I make them with a bit smaller scoop and bake 12 minutes just to get a few more cookies at a bit less calories. Delicious!

I found these a little bit disappointing. I didn’t flatten the first tray as stated in the book and did so after baking. They didn’t look nice and round that way. Also although they were brown on the edges they tasted a but to raw and soft for my taste after 14 minutes. I baked the second and third tray without the sugar on top and did flatten them beforehand which definitely made them look better. I thought they would firm up more after having cooled down. Should have baked them for 16-18 minutes to make them crispier from the outside.

Somehow these cookies managed to be delicate and crispy on the edges, and fudgy and chewy in the middle. They were sweet and salty and fragrant. Probably the best peanut butter cookies I’ve ever made and I will make them again.

I made the 1st tray as instructed (1/4 cup cookies, not flattened, with sea salt) and we were not exactly fans. For the remaining dough, I made 25 g cookies, flattened with a fork and skipped the salt. For us....these were far better BUT having said that, these do not beat out other favourite versions.

Good peanutty flavor and chewy texture. We made them slightly smaller and got 25 cookies; baking time was 15 min.

I was skeptical when I saw the shortening, as I never use it. But turned out really well and are truly delicious. Mine took 16 minutes.
