Can substitute vegetable stock for vegan dashi, instant ramen noodles for fresh ramen noodles, leeks or eschalots for brown onions, and sweet potatoes for kabocha pumpkins. You may use the Vegan dashi recipe on p. 360.

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Good, not my all time favorite ramen recipe, but good. I added soy sauce at the table to balance the sweetness.
