    You may substitute vegetable stock for mushroom broth and any nut milk or cow milk for cashew milk. You may use the cashew butter recipe on p.167, the mushroom broth or vegetable stock on p.160 and the roasted buckwheat on p.172.

    This is a wonderful soup and delivers a perfect mushroom flavour and texture. I used an incredible mushroom glace to create the stock and no doubt that was part of the magic (essential cuisine wild mushroom glace). We didn't bother with the toppings and didn't miss them. Can't wait to make this again!
