Can substitute dried lima beans or dried cowpeas for dried navy beams, tomatoes for tomato paste, and fresh coriander for all or part of flat-leaf parsley. Soak dried navy beans overnight. You may use the Red miso recipe on p. 109, and the Salt-preserved lemons recipe on p. 63.
