    Super easy, though I didn't let the cucumber sit for longer than 10-15 minutes. I used 1 regular cucumber and eyeballed the rest of the ingredients.

    Good balance of sweet, sour, and creamy. Enough dressing for 1.5 - 2 cucumbers. Next time I might not bother to peel the cucumber.
