Notes about Recipes in this book

  • Hungarian chicken paprikash

    • anya_sf on June 12, 2025

A bit more complicated than other paprikash recipes, but really flavorful. I wasn't able to puree the small volume of red pepper mixture in my Vitamix and had to transfer it to a smaller chopper.

  • Hungarian dumplings (Nokedli)

    • anya_sf on June 12, 2025

Made the batter a few hours and chilled it; the consistency was just right for my spaetzle maker. I was able to cook the noodles in 2 batches. The nutmeg seemed odd here - it tasted fine, but didn't add anything IMO, so I'd leave it out next time.

  • Cucumber salad with sour cream

    • anya_sf on June 12, 2025

Good balance of sweet, sour, and creamy. Enough dressing for 1.5 - 2 cucumbers. Next time I might not bother to peel the cucumber.

    • Skamper on June 18, 2025

Super easy, though I didn't let the cucumber sit for longer than 10-15 minutes. I used 1 regular cucumber and eyeballed the rest of the ingredients.

  • Thai stir-fried pork with basil, chilies and garlic (Pad kraprao)

    • Running_with_Wools on September 04, 2025

This was fantastic and very easy. With the basil from my garden, a tasty pantry meal. I ended up grinding a pork tenderloin so it was very lean. My boys gobbled it up. Everyone loved the fried eggs, too. I’ll definitely make this again.

  • Peruvian stir-fried chicken and noodles

    • TonyInSeattle on March 27, 2023

An unusual combination of ingredients that actually works.

    • anya_sf on June 04, 2025

I doubled most of the ingredients, but not the chicken (which was already cooked but cut in strips and frozen). Also added some snow peas and bean sprouts with the peppers and we liked having more vegetables. The sauce was quite tangy, but in a good way, although I might start with half the lime juice next time.
