Caribbean shepherd’s pie from Bon Appétit Magazine: February 2023: Healthyish (page 58) by Gregory Gourdet

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

  • Eat Your Books

Can substitute habanero chiles for Scotch bonnet chiles, and potato starch for tapioca starch.

I substituted lower-sodium soy sauce for tamari and used a habanero chile with seeds removed, so it wasn't too spicy. Tasted on its own, the potato topping had an odd floral/fruity flavor, but that could be the coconut milk I used (Aroy-D in aseptic packaging, which I'd never tried before). But when everything was eaten together, we didn't notice that, and really enjoyed the unique flavors in this version of shepherd's pie. Usually I add vegetables, but didn't this time - served sauteed greens on the side, which went well with it.

Delicious and flavorful. Ginger makes it. I skipped the slurry step and would do that again. I'd also probably add carrots, mushrooms, etc.
