Crispy seltzer waffles from Gourmet Today: More than 1,000 All-New Recipes for the Contemporary Kitchen by Ruth Reichl

  • store-cupboard ingredients
  • seltzer water

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

I used fresh carbonated water from the soda stream rather than the can, so I’m not sure if that caused the difference. The waffles didn’t keep their crisp for me, but when toasted in the toaster oven again, they were lovely!

This is an excellent last-minute waffle recipe, for when you didn't have the foresight to prepare yeasted waffle batter the night before. Yeasted waffles are still my favorite for their flavor and tender yet lightly chewy interior, but these are still great. They also remained amazingly crispy on the outside, probably more than any other waffles I have made. The only drawback was that they seemed to be just a touch tougher than other waffles. This wasn't a major issue, but I would like to try substituting corn starch for part of the flour to see if that would make a difference.
