Easy freezer waffles from Smitten Kitchen by Deb Perelman

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

I couldn't resist buying the mini waffle iron for these; each waffle took about 60 seconds. I used a regular ice cream scoop (a little under 2 oz) but wasn't super consistent, so some were a little thinner and some got a little darker. Once toasted, those differences didn't seem to matter. We have a toaster oven instead of a regular slot toaster and the waffles took 2 full cycles to toast - regular would probably work better with the elements closer. It's been a long time since I ate an Eggo waffle, so I can't say if these were the same, although the aroma was definitely familiar. They were good!

An easy, very tasty waffle for when I don’t get my discard started the night before. Will find out about the freezer part
