    First time I made the mistake of dumping in the full amount of salt - I don't have access to kosher salt and instead use a coarser sea salt. Turned out way too salty. About half the amount of salt (which is also what is mentioned in the book) works well. The recipe gives plenty of advice as well as inspiration for aromatics and herbs to add.
