    Can substitute vegetable oil for avocado oil, coconut milk for coconut cream, prawns or canned chickpeas for extra-firm tofu, and canned diced tomatoes for tomatoes.

    I subbed cauliflower for mushrooms, but I doubt that had much effect on the flavor. This recipe has no spice at all, which I didn't notice until the end of cooking. I prefer a spicy curry, so this was not ideal. Regardless, we liked the combination of flavors with the tofu and veg. I added a drizzle of spicy tamarind sauce to mine for some added heat.
