Notes about this book

  • Frogcake on October 01, 2023

I really enjoy the format of their books - all recipes are diverse including options for nut-free, vegan, vegetarian, gluten-free adaptations. This diversity is necessary in my family to accommodate all diets and sensitivities. As well, all of the recipes are clearly written, simple, and healthy but very tasty and interesting! Thank you Jillian and Tori!

Notes about Recipes in this book

  • Breakfast burritos

    • christinezac on December 17, 2023

Made with eggs instead of tofu. Delish!

  • Double chocolate zucchini bread

    • hbakke on October 06, 2024

Loved the addition of zucchini and hemp hearts, but wanted a deeper chocolately flavor. I might try this again with more choco chips.

  • Sweet and spicy vegan lettuce wraps

    • hbakke on June 13, 2024

Delicious! These were a little time consuming with the different sauces and accompaniments, but the result was so good. I went lighter on the cornstarch on the soy curls to avoid tasting it in the finished dish and added a little more cornstarch to thicken the sweet chili sauce (delicious, even if a little watery), but otherwise followed the recipe. I haven't eaten those crunchy chow mein noodles since I was a kid and they were the perfect crunch in these wraps. A definite repeat for me.

  • Dill pickle potato salad

    • laur0684 on March 17, 2024

Very Dijon mustard forward as written. I would half the quantity next time. I suggest adding a little and tasting as you go until you get the right flavour profile for your preferences.

  • Soba noodle salad

    • hbakke on December 21, 2023

We loved this soba noodle salad with all the vegetables and romaine lettuce. The dressing was nicely different from other soba dressings I've had in the past with the addition of mayo and onion. Will repeat.

  • Ginger "beef"

    • hbakke on December 06, 2023

Crispy and flavorful. This reminded me of a "Mongolian" beef dish from an Americanized Chinese restaurant in the best possible way. The sauce was a little too thick after adding the cornstarch, so it required a bit more liquid. Next time I'll add some onions, bell peppers, or broccoli for added veg.

  • Coconut curry

    • hbakke on December 13, 2023

I subbed cauliflower for mushrooms, but I doubt that had much effect on the flavor. This recipe has no spice at all, which I didn't notice until the end of cooking. I prefer a spicy curry, so this was not ideal. Regardless, we liked the combination of flavors with the tofu and veg. I added a drizzle of spicy tamarind sauce to mine for some added heat.

  • Sweet and spicy green beans

    • hbakke on December 06, 2023

Great, flavorful side dish. Will repeat.

  • Cilantro lime rice

    • hbakke on December 13, 2023

      Simple, flavorful side dish.

  • Maple acorn squash

  • Overnight pickled beets

    • hbakke on January 22, 2024

Easy pickled beets recipe. I would remove the whole cloves from the pickling liquid next time before adding to the beets to avoid having to pick them out later.

  • Spicy Sriracha mayo

    • hbakke on June 13, 2024

Easy, tasty sauce. An excellent accompaniment to this book's lettuce wrap recipe.
