Salt and pepper shortbread from Delicious Magazine (Aus), April 2024 (page 103) by Eleanor Ford

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Out of curiosity, I bought grains of paradise several months ago when I saw it at The Spice Shop. It was available in a mediaeval Italian blend called Scappi: cinnamon, cloves, ginger, nutmeg & grains of paradise. The shopkeeper suggested I use it in a lentil stew. It was an interesting stew but none of us was keen to eat it again. Then I found this recipe, which specifies half a teaspoon of grains of paradise and half a teaspoon of black pepper, so I used a full teaspoon of Scappi instead. I was running out of plain flour so used half plain flour & half multi-grain atta (finely milled mix of wheat, soyabean, oats, chickpeas, maize, red millet, flax seeds, pearl millet, juvar & psyllium husk all said be more nutritious than wheat). The shortbread has turned out delicious & exotic.
