    Can substitute tomato paste for tomato, parsley for thyme, and rice vinegar for Champagne vinegar.

    This is a quick way to turn a very inexpensive no-name box of vegetable stock into something that I'm much happier to have on hand (frozen in 1 cup blocks). The idea of the champagne vinegar at the end seemed odd but it certainly added something good to the finished broth.
