    I used my own Cajun blend which has a pretty good punch of heat. With hard boiled egg & bacon + chicken replacing the shrimp, this a great main dish salad but as I thought we might miss some cheese, I opted for cubes of an aged white cheddar. Our house favourite Cobb is still made with a honey/mustard ranch + blue cheese but we also really enjoyed this tasty twist.

    Yum! This was great and super easy. The ranch was a little too acidic so I'll probably just do either the lemon juice or the red wine vinegar instead of both next time.
