    Can substitute canned beans of your choice for canned black beans, habanero chiles for jalapeño chiles, Rotel for canned diced tomatoes, and pepper Jack cheese for Monterey Jack cheese.

    I used Rancho Gordo dried pintos that I had cooked previously, subbed ricotta salata for the Cojita (that’s what I already had) and halved the recipe for two of us. Otherwise made as written and it was great. Even the carnivore who doesn’t think a meal is complete without meat declared it good. Plenty of leftovers for lunch.
