Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

    A very ample serving: half an eggplant per person is more than enough! Easy recipe, and a tasty enough weeknight supper with a green salad . Don't know I'd bother boiling the eggplant boats next time: they're in the oven long enough to cook through - they lost shape & texture, which I put down to the pre-boil. I also topped with additional Parmesan to gratinate.
