Great grains muffins from Baking - From My Home to Yours (page 9) by Dorie Greenspan

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Good muffins! Texture was moist and a bit springy. I made these with golden raisins, which worked well, and old fashioned rolled oats. I found the oats to be a bit chewy - will try using thinner rolled oats or quick oats next time.

I made these with dried cherries and pecans. They were okay. I liked the fact that they weren't too sweet and we liked the texture from the cornbread and oats but I prefer muffins with more spice/flavor and these are pretty plain.

I reduced the butter to 1/3 cup and they turned out fine. For the fruit I used prunes and dried apples. The muffins were delicious, not too sweet, with a fairly hearty texture.

Simple and delicious. These muffins have a bit of tooth but are favorful and moist. I used quinoa flakes instead of oats and an equal mix of dried cherries and walnuts. I will make these again.
