Allow to marinate for at least 4 hours, and preferably overnight. The book's "All-day seasoning blend" and "Green seasoning" called for in this recipe can be made in advance. Can substitute habanero pepper for Scotch bonnet pepper, and store-bought green seasoning for this recipe's home-made version.
