    Great salad! Makes an enormous amount -- my family of 4 had it as our main dinner dish and then I had it for lunch for the next 4 days. Would likely halve the recipe next time, and also will use fewer beets, or maybe more lentils-- I felt it was a little heavy on the beets. Flavors were excellent though, and I loved the addition of the toasted walnuts.
