      Very good! I did the non-vegan version (eggs, dairy greek yogurt) but would like to try the vegan version next time. The flavor and texture were great, and it was a pretty easy recipe.

  • Tuna salad

      Went slightly rogue since I didn’t have any onion and added a little chili crisp for another texture/flavor. Excellent!! Will make as written when I have onions in the house. But anyway just a really lovely elevated tuna salad recipe with room for riffing.

  • Beetroot, black lentil, feta & walnut salad

      Great salad! Makes an enormous amount -- my family of 4 had it as our main dinner dish and then I had it for lunch for the next 4 days. Would likely halve the recipe next time, and also will use fewer beets, or maybe more lentils-- I felt it was a little heavy on the beets. Flavors were excellent though, and I loved the addition of the toasted walnuts.

  • Crispy chickpea Caesar salad, fennel seed croutons & tahini dressing

      Not bad, though I prefer the standard Caesar dressing with anchovies to this tahini dressing. My chickpeas never got crispy despite an extra 15 mins in the oven. I did dry them well before roasting but I think in future I'll let them air dry for hours before roasting and see if that helps. The fennel seed croutons were great.

  • Mushroom pasta

      I love mushroom pasta and this was a nice recipe with parsley and créme fraîche. But there was far too much Parmesan and it over-powered the mushrooms, which should be the star. I would half or even quarter the amount of cheese if I make it again.

      Read the recipe carefully; don’t be like me and not realize that you’re supposed to let the pasta dry for an hour lol. Delicious even through my mistakes though

      Super delicious and wholesome tasting. Made the orecchiette after watching a couple videos, which helped. Really enjoyed how they taste and feel when eating. Chickpea and pasta recipes are often dry and bland. This was not.

  • Bakewell pudding slice

      Didn't love this. A Bakewell to me should be almond-forward and with only 1 tablespoon of ground almonds in this, the topping was just a sweet custardy flavor and texture. The pastry was good - it's the first time I've made pastry in a stand mixer. Took much longer than using the processor so not sure why she goes that way. Not a repeat for me.

      I love almond cookies but these somehow weren't almond-y enough. Odd since all they are is almond meal, egg whites, sugar and a little almond essence. I prefer my macaroons gooey and these were quite firm.

      Great apple crumble! Would make again. Liked the addition of flax seeds to the topping. Next time I will scale back on the sugar just a bit.
