I made and froze a batch of this to take camping, and it was a perfect camping meal. I used a poblano for the green pepper, and that bit of spiciness was good. You don't get quite the same searing you'd get from freshly made fajitas, but the taste was great, the prep was easy (with all the chopping done ahead of time), and the resulting tacos were delicious. Note that the recipe say it serves 4, but we felt it easily made enough to serve 6.
