Cacio e pepe borlotti beans from Bold Beanco - Full of Beans: Delicious Beany Recipes to Obsess Over (page 75) by Amelia Christie-Miller

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Can substitute jarred butter beans for jarred borlotti beans, and vegetarian hard cheese for Parmesan cheese.

This ended up extremely salty, I'm not exactly sure why as I didn't add any extra. I made it with butter beans, because it's what I could find. I also added some crispy mild Italian sausage (which was not especially salty, I checked) on top for extra protein. It tasted very good, but the salt got a little overwhelming after the first few bites. If I make this again, I will drain and rinse the beans and perhaps use less cheese and more lemon.
