    I made the Banana Coconut version. A pleasantly flavored cake. Great texture when eaten soon after coming out of the oven - slightly crisp top contrasting nicely with soft cake inside. This set of textures faded by the next day, though the cake did stay tender. I made a half-batch version and forgot to place cake on a baking sheet while baking in an 8x8-inch pyrex pan - the bottom did end up on the brown side (though not bitter) and the top domed pretty high. Good with caramel ice cream!
