    This is a great dish to make in the dead of winter because it is carrot and broccoli based. Everything cooked up perfectly and the chicken was nice and skin-crispy. I did cook the peanut-lime dressing way longer than 1 minute to get it to thicken. Lots of flavor and a pleasant amount of spicy heat. I don't think I'll make it again because I'm not a huge red curry fan and there are so, so many sheet pan chicken dishes to make and so, so little time, but it was a great one hit wonder in our household.
