Can substitute apple cider vinegar for rice vinegar, and kohlrabi for jicama. Requires 24 hours pickling time. You may use the Simple syrup (Sirup gula) recipe on p. 38, and the Fresh tofu (Tahu segar) recipe on p. 44.
