Can substitute yellow onion or white onion for red onion, and white button mushrooms for cremini mushrooms.

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Easy to put together in the instant pot. Flavor was spot on for my mother's wild rice casserole. The cashew milk is rather thin and creates a thin soup. Would probably be more satisfying with coconut milk added at the end, but then it wouldn't be anti-inflammatory.
