    First recipe from this book and a winner. Use plenty of mint and spring onions can be replaced with finely sliced red onion (I mixed all of this together) Served with Cyprus potatoes, par boiled, cut into wedges and oven roasted. Pan fried salmon was very nice but I can see other possibilities (tuna, swordfish or chicken). Listed under easy weeknight dinners in the book and it definitely was.
