    This comes together easily, is enjoyed by all, and tastes better after a day or so. Great as a pre-dinner Christmas treat!

    Salmon Rillettes on page 26. While the recipe turns out a tasty salmon spread (a combination of fresh and smoked salmon), it was nothing like the rillettes I've had in France. They always had that rich, embrace your tongue feel that only comes from quantities of fat.
