    As written, this is a delicious pot of soup! I love the method of steeping the cobs in the milk but yes - for me - I need to use a mix of 2% milk & 5% cream because I never have "whole milk" on site. I also started with a smaller volume of milk (2 cups rather than 3) and a smaller amount of water (actually 1/2 chicken broth & 1/2 water) ..... of course willing to up the liquids if required later (& it wasn't ). After the final purée, it was excellent so now personal preference kicks in....I added an additional big handful of corn and a bunch of chopped roasted red peppers for extra texture, colour and flavour. This is really lovely bowl of soup that I would happily eat at my desk OR serve as a formal dinner party starter.

    And how delightful it is. Slightly sweet from the fresh corn subtley fragrant with the mix of thyme, bay leaf, and rosemary. Delicious from the first bite to the last.
